Grape varieties

55 % Grenache, 23 % Syrah, 12 % Mourvèdre & 10 % Cinsault.

Winemaking

Each vineyard plot as well as each grape variety is vinified on their own and our specific approach consists of gentle maceration of the grapes in a concrete tank over a period of 20 to 30 days. The tanks have a temperature control system and the time of maceration is carefully thought out according to the tastings and following our consultant enologist’s advice.

Gnocchi alla Sorrentina

Ingrédients :

  • 500g gnocchis
  • 40cl of tomato puree
  • a spoonful of milk
  • about 20 basil leaves
  • 100g of grated Parmesan cheese
  • 200g of Mozarella
  • salt

Directions:

Preheat oven to grill

Pour tomato puree and milk into a saucepan. Halve the Mozarella in two equal parts then cut one of the half into small dices then add into the saucepan.

Wash and slice basil leaves and put into saucepan. Finally add 50g of grated cheese and a pinch of salt , stir continuously to make sure the cheese is well integrated into the sauce.

Cook the gnocchis and strain them in colander. Oil an ovenproof dish then pour the sauce over the gnocchis to cover them entirely.

Cut the second part of Mozarella into medium-sized dices, put them over the gnocchis evenly. Sprinkle with Parmesan cheese.

Put the dish under the grill for about 4 minutes

Serve immediately right out of the oven
